The alpha rice in this "With Water." series is Koshihikari rice, grown by Mu no Kai — an organic farm in Aizu, Fukushima, a region long known for its rice — and processed using Shinsei Bio's own α-conversion method.
The result is alpha rice with the taste and texture of freshly cooked rice.
Most alpha rice comes pre-seasoned in some way. This one is intentionally simple.
Because the care put into the ingredients and process are left to speak for themselves, the water you use—spring, mountain, whatever you’ve drawn along the way—directly shapes the taste and finish, which is part of what makes it interesting.

Munokai Natural Farm, Aizu, Fukushima
Mu no Kai is the largest organic farm in Aizu — growing rice, vegetables, and fruit using a circular farming system that combines the wisdom of the Edo-period "Aizu Nōsho" agricultural manual with modern science. Organic material collected from businesses across Aizu become their own plant-based compost, returning the region's resources back into the soil.
Under the guidance of Kojima-sensei, the farm's founder, young farmers in their 20s and 30s travel from across Japan to practice organic growing methods built for the road ahead. They are committed to addressing the challenges facing agriculture today while also taking on the broader challenges of passing farming down to the next generation.
I’ll never forget how moved I was the first time I tasted Mu no Kai's rice.

How to Prepare
- Remove the rice from the bag.
- Pour the rice into a container.
- Add 300–350ml of boiling water per one bag (200g).
- Wait 15–20 minutes. Take in the landscape while you do.
- Enjoy the scenery, and the rice, together.
